Egg Custard Tart recipe

Our local egg man Tony has had an unusual amount of duck eggs this year, and we have been using them wherever we can, take this classic baked egg custard tart, we are serving it with a homemade nutmeg ice cream and raisins soaked in Earl Grey tea, so i thought i’d share the recipe with you.
Egg custard
4 duck eggs
100g sugar
300ml double cream
200ml whole milk
1 whole nutmeg
Mix the eggs well with the sugar, pour in the cream and milk, mix again and chill for about an hour, now simply pour into a blind baked sweet pastry ring, grate the nutmeg over the top with a fine grater, and bake at 150oc for 45 minutes, cool completely before serving.
